Pale to medium straw yellow with lots of fine bubbles!
Aromas of apple, lemon-lime with floral green herbs & chamomile.
Flavors of lemon, quince, pear & honey with a slightly bready finish. Dry on palate with pronounced minerality & crisp acidity, when labeled "Brut".
A blend (cuvée) usually based on Chenin Blanc, Cabernet Franc, Pinot Noir & sometimes Chardonnay & several other local grapes.
High quality French sparklers not from Champagne but crafted the same way, are often labeled Crémant ("creamy") & are somewhat less expensive. Sweetness levels are labeled the same as Champagne.
Serve it cold. A perfect aperitif or pairing with an assortment of cheeses, charcuterie & hors d’oeuvres. Pairs great with oysters, crab & fresh water fish. A great summertime drink. (Rosé style pairs beautifully with fried chicken & spicy Hunan pork.)
